Apple Lime Tuna Salad

"The first time I heard of tuna salad with chopped apples in it, I really had some doubts. And then I tried it! Since then I've played with the ingredients and have come up with this. It's a very flexible recipe. I've made it for sandwiches. I've added cooked macaroni for a whole meal salad. I've eaten it on crackers. I've used small shrimp instead of tuna. I've added celery and used different colors of peppers. I've used lemon instead of lime. I've used garlic salt instead of regular salt, and made many other substitutions. It always turns out good!"

  • Drain cans of tuna, then crumble and place in a medium bowl. Add apple, peppers, onion, eggs, and stir.
  • Combine mayonnaise, lime zest and juice, garlic salt, lemon pepper, pepper sauce, and pour over tuna mixture.
  • Stir and chill until ready to serve.

  1. I have used this recipe as a starting point a few times. Usually I add in small shell or macaroni pasta to make it into more of a tuna pasta salad. I agree with the other reviewer: as long as you have the tuna, apple, mayo, hard-boiled egg, lime base, I think you still have the spirit of the recipe intact. Yum! Thanks for sharing.

I really liked this refreshing spring-like tuna salad and you are right, this recipe can be used as a starting point for many additions and substitutions as long as you have tuna, apple, mayo, boiled egg, and citrus as a base. I followed the recipe, but made two changes. I did not add jalapeno pepper and used Meyer lemon for lime since we always have abundant Meyer lemons we can pick from our own tree throughout the year. I think because Meyer lemons or perhaps my lemons have quite a bit of juice, I only used half a lemon for a half a recipe and found it perhaps a bit too much liquid and next time I will use a bit less. But, citrus in this tuna salad is a key as well as apple and should certainly be included. Thank you Kendra for sharing this wonderful recipe with us.

<p>Although I currently live just outside St. Louis, this was the 20th move my husband and I made in the 28 years (at the time of our move) of our marriage. Most of those moves occurred in my husband's 25 year career as a pilot in the Air Force. When he retired 7 years ago, he went to work for Boeing and we both thought we'd go back to Seattle and never move again. Boy were we wrong! But our eventual goal is to end up back in the northwest. I love to read, quilt, and collect cookbooks and recipes. Have I found the right website or what?&nbsp; Pet peeves include people who&nbsp;give low ratings but don't say&nbsp;why and people who rate recipes they haven't tried. <br />EDITED TO ADD ON Jan. 27, 2007: Well we're here! We made it back to Seattle after what I call The Move From H---! We had major problems on both ends of the move, but the worst things happened here. Less than two weeks after we moved into our new house in Bellevue, a storm blew through and sent two tree limbs through the roof! Our power was off for almost a week, so we ended up moving back into the hotel we thought we had left behind. But we're back in our house now and slowly but surely, it's beginning to feel like home. And on the sunny, warm days, we remember exactly why we've always loved Seattle so much! Our favorite restaurant (Jake O'Shaunesey's) is gone, so we'll have to spend lots of time eating out in search of a new one!</p>
