  • Sift together dry ingredients.
  • Add wet mixture until batter is lumpy.
  • Pour into muffin pans and bake at 350 for 20 to 30 min until set.
  • Let cool.

  1. This is really a super easy recipe and the result great!<br/>I used diced apples from the garden, used about 1 spoon of liquid sugar substitute, arabic cinnmon and only egg whites. My family didn't noticed that I did't use "real" sugar and not egg yolk!<br/>The top didn't rusult as crumble (aka streusel) but I don't mind because the taste was delicious.<br/>Thanks a lot for this recipe.
     
  2. Delightful little morsels! I did not add nuts; because then the kids can't bring them to the nut free school environment. Instead I splurged and used real sugar (which I think might actually be included in the nutritional value). Made for OMA Challenge / ZWT6 / Unrulies under the Influence

  4. I am going to give you 5 stars because my picky toddler LOVED THEM. I made the recipe as written, only using white whole wheat flour in place of regular flour which was a great sub. My apple was a Gala. This recipe made 3 regular sized muffins and 24 mini muffins. I sent the mini muffins to school with my son today and got a call from the teacher stating that they ALL ate them up. . .nothing left!!! Thanks for a keeper! Made for ZWT6.
     
  5. This is a great tasting muffin, and very moist. I had to do a little guess work with the recipe, though. I assumed the apple was peeled and chopped, and I also assume the second cinnamon and nuts are the streusel and should be sprinkled on top? I used a Granny Smith, which added a bit of tartness to the muffin. Made for Spring 2010 PAC.

  2. I was surprised at how light these muffins were considering there isn't much fat in them. I made a few changes - used butter instead of margarine, regular sugar instead of the substitute, pecans insted of walnuts and used half whole wheat flour and half regular. I also used a cup of applesauce as I didn't have an apple on hand. I am not sure where the streusel comes in but this is a nice light muffin I will make again - maybe add a banana to make it a bit sweeter.
