  • Preheat the oven to 400 degrees. Grease 12 muffin tins.
  • Combine dry ingredients in a large bowl and add the egg, milk and oil.
  • Stir the ingredients until they are just blended. Do not over-mix.
  • Spoon the batter into greased muffin pans, filling 3/4 full.
  • Bake for 15-18 minutes or until golden brown.

  1. The flavor of these muffins was very good. However, i did as the recipe said and did not rehydrate the apples. making the end muffins very dry. might make again only rehydrate the apples.
     
  2. We really enjoyed these. I followed the recipe other then I used Splenda instead of sugar, canola oil instead of vegetable oil and a bit more apples then indicated. I also forgot to add the nutmeg. I put these in for 15 minutes but I checked them at 13 and they were burnt a bit on top. Next time I would watch them more closely. They were really tasty. We all enjoyed them.
