  • Preheat oven to 400 degrees.
  • line 12 muffin tins (2 1/2 inch around) with paper liners.
  • Sift Brown Sugar, baking soda, salt and cinnamon together. Add flour then shift again. In a bowl combined egg, melted butter and buttermilk. Stir the wet ingredients into the dry ones and mix just to combined don't overbeat. Add apples and pecans.
  • Spoon batter into muffin tins 2/3 full. Sprinkle with granulated sugar and bake to 25 minute Transfer to rack and cool.

  1. I had some trouble with this recipe. I think the main reason was that the amount of apple is not given. I tried once with the 2 apples in the ingredient list, and also with 1 cup of nuts, but it seemed like there was way too much of both. The muffins didn't rise well, and I was not happy with them. It seemed to me that the size of an apple varies quite a lot, so I tried once more, using about 1 1/4 cup chopped apple (a little less than one of the apples I had), and also decreased the nuts (I used walnuts) to 1/2 cup. The first time, the muffins also stuck terribly to the paper liners, so the second time, I merely greased the tins, and was able to remove them easily. I also used a little more cinnamon the second time, which, turned out to be fairly successful. I think this has the potential to be a very useful recipe, but needs adjustment for individual situations. Thank you for sharing it with us.
