CAKE
- 1 1⁄2 cups vegetable oil
- 1 1⁄2 cups sugar
- 1⁄2 cup brown sugar, packed
- 3 large eggs
- 3 teaspoons vanilla
- 3 cups flour
- 1 1⁄4 teaspoons baking soda
- 3 teaspoons cinnamon (can use more)
- 3⁄4 teaspoon nutmeg
- 4 apples, peeled and diced
- 1 1⁄4 cups chopped walnuts

GLAZE
- 1⁄3 cup butter
- 1⁄3 cup light brown sugar, packed
- 1⁄3 cup white sugar
- 1⁄3 cup whipping cream, unwhipped
- 1 teaspoon vanilla
directions
- Set oven to 325 degrees.
- Grease and flour a 12-cup bundt pan.
- In a bowl using an electric mixer beat the oil with white and brown sugar until well blended (about 4 minutes).
- Add in eggs and vanilla; beat until well combined.
- In a small bowl combine the flour with baking soda, cinnamon and nutmeg; add to the sugar mixture; mix until combined.
- Fold in the apples and nuts.
- Transfer to the bundt pan and bake for about 1 hour and 30 minutes, or until the cake tests done.
- Cool in pan for 20 minutes, then remove to wire rack.
- To make glaze: In a heavy saucepan combine butter, brown sugar, white sugar and whipping cream; bring to a boil and simmer over medium heat stirring or whisking constantly for 1 minute.
- Stir in the vanilla.
- Drizzle the warm glaze over the cake.

I needed to use up some apples, so I made this and took it to work the next day and everyone raved about it. It was soooooooo moist and had so much flavor. I used 3 large apples and substituted pecans for the walnuts. Other than that, I followed the recipe as written. As other reviewers have said, the brown sugar glaze is scrumptious. It makes a lot of glaze. I used about 3/4 of the glaze and I'm going to use the rest on some banana bread that I am making tonight. Thanks for another great recipe, Kittencal.

This recipe is fabulous!! I made because I had some apples that had to be used up and it was gone in a flash! The glaze is AMAZING!! I loved it so much I made a spice cake the next day (no apples left to make this recipe :( ) and topped it with the glaze and took some leftover and poured into a squirt bottle to use whenever I like!!! Thanks kittencal for another Fabulous recipe!!

I haven't made the cake yet...this rating is for the Brown Sugar Glaze. Yum! I topped a pumpkin spice cake with it (Pumpkin Bundt Cake II #3559), and it was totally delicious! UPDATE: I made the cake and it is fantastic, also a 5-star recipe. Very moist and flavorful. I used MacIntosh apples. It tastes even better on Day 2.

I just had some of this apple cake. I doubled the recipe and made 1 cake in a bundt pan and two loaves. I only made one batch of the glaze thinking that would be enough. The glaze is NOT to be missed. I ended up making the SECOND batch of glaze too. The amount Kittencal states is perfect (don't try to skimp on this amazing glaze). One tip is I used toothpicks and poked holes in my cake so that the glaze could seep into the cake better. So many people are enjoying this. I gave one loaf to a friend and will take another to work. The rest will be split among many friends. (Also, I used my food processor to dice the apples after I peeled them). I used Granny Smiths and found them to work wonderfully with this perfect super moist cake. Kitten - Another wonderful winner of a recipe. I will definitely make this again. Thank you!!

Loved the recipe. It was a very moist bundt cake and the sauce was great. I only lightly glazed the cake and used the leftover for people to add at their discretion. I did not have any whipping cream on hand and substituted 1% milk for the glaze. Did not add any nuts since we had none. Very tasty!!!
