  1. Heat oven to 325 degrees.
  2. Line 13x9-inch pan with foil.
  3. Mix crumbs, butter and 2 TBSP sugar; press into bottom of pan and bake 10 minutes.
  4. Beat cream cheese, 1 Cup sugar and vanilla with mixer until well blended. Add sour cream and blend.
  5. Add eggs one at a time mixing on low between each until well blended. Pour over crust.
  6. Mix remaining sugar, apples, pecan and cinnamon and spoon over batter.
  7. Bake 1 hour to 1 hour and 5 minutes Cool. Refrigerate 4 hours. Use foil to lift cheesecake from pan before cutting to serve.
