  1. Preheat the oven to 350°F.
  2. Combine first seven ingredients in bowl. Make a well in the center.
  3. Combine buttermilk, 2 tablespoons butter and egg- stir well. Add to flour mixture. Stir until moist, set aside.
  4. Combine apple, pecans, splenda, cinnamon and 1 tablespoon butter. Stir well, set aside.
  5. Spoon two tablespoons batter into each muffin cup.
  6. Divide apple mixture evenly amongst muffins.
  7. Top each muffin with the remaining batter and sprinkle the sugar evenly over each muffin.
  8. Bake for 25 minutes.
  9. Remove from pan and let cool.
