  • Supply pie crust of your choice.
  • Heat oven to 425 degrees.
  • Beat egg and water and brush pastry with this glaze.
  • Refrigerate shell until ready to fill.
  • Squeeze juice from lemon.
  • Peel and slice apples, maintaining a uniform size so they bake evenly.
  • Toss apples, lemon juice, brown sugar, flour, nutmeg, and cinnamon.
  • Fill pie shell.
  • Dot with butter.
  • Top pie with second shell and crimp edges.
  • Poke with fork or make a few slices with a knife.
  • Brush edges of crust with egg glaze.
  • Sprinkle crust with granulated sugar if desired.
  • Bake 10 to 12 minutes, then reduce heat to 350 degrees and bake until golden brown, 40 to 45 minutes.
  • Cover edges with foil if they are browning too fast.
