- 1 egg
- 1 tablespoon water
- 1 lemon
- 5 -6 tart apples (2 1/2 to 3 pounds)
- 1⁄2 cup packed light brown sugar
- 2 tablespoons flour
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon cinnamon
- 2 tablespoons butter
directions
- Supply pie crust of your choice.
- Heat oven to 425 degrees.
- Beat egg and water and brush pastry with this glaze.
- Refrigerate shell until ready to fill.
- Squeeze juice from lemon.
- Peel and slice apples, maintaining a uniform size so they bake evenly.
- Toss apples, lemon juice, brown sugar, flour, nutmeg, and cinnamon.
- Fill pie shell.
- Dot with butter.
- Top pie with second shell and crimp edges.
- Poke with fork or make a few slices with a knife.
- Brush edges of crust with egg glaze.
- Sprinkle crust with granulated sugar if desired.
- Bake 10 to 12 minutes, then reduce heat to 350 degrees and bake until golden brown, 40 to 45 minutes.
- Cover edges with foil if they are browning too fast.
