Apple Pie in a Skillet

  • In a food processor, blend the 1 1/2 cups flour and 1 stick of butter until blended well. Slowly mix in the 1/4 cup cold water until a ball forms. Add a teaspoon of extra water if needed. Divide ball in to four balls and set covered in refrigerator for about 30 minutes.
  • With an apple slicer, slice apples and cut off peeling; set aside.
  • Roll out pie dough (10-inch circle) and put on small (6-inch) cast iron skillet dusted with flour. Repeat until all four skillets have pie dough.
  • Fill each pie dough with one apple (sliced and peeled), top apple with 1 tablespoon butter, sprinkle with 1 tablespoon sugar and finish by sprinkling with 1 teaspoon cinnamon. Take pie crust and bring into the middle of the pie (it will look like a basket). Repeat until all pies have been finished.
  • Melt 1/4 cup butter and pour equal amounts over the pie tops. Sprinkle each pie with 1 tablespoon sugar and 1 teaspoon cinnamon. Bake in 375°F oven for 50 to 60 minutes, until golden brown.
