- 2 cups mcintosh apples, chopped
- 1 cup raisins
- 2 cups granulated sugar
- 2 cups nonfat sour cream
- 2⁄3 cup canola oil
- 2 cups white flour
- 2 cups whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons salt
- 1⁄2 teaspoon baking powder
directions
- Heat oven to 400 degrees.
- No mixer needed! Stir oil and sugar until evenly mixed. Stir in sour cream until smooth. Combine dry ingredients and stir into cream mixture just until moistened. Fold in the apples and raisins or other desired fruit.
- Fill paper lined baking cups 3/4 full. I use a standard ice cream scoop to make them of uniform size. Bake about 18 minutes or until they test done. If baking two pans, bake them separately.
