  • Preheat oven to 350.
  • Grease a 13 x 9 x 2 baking pan.
  • Cream butter and sugar.
  • Add eggs and vanilla, beat well.
  • Sift together flour, baking soda, baking powder, and salt.
  • Add dry ingredients to the first mixture alternately with 1 cup sour cream.
  • Stir in chopped apples.
  • Spread evenly in greased pan.
  • Mix together ingredients for nut topping.
  • Sprinkle over batter.
  • Bake for 35-40 minutes.

  1. Excellent recipe! I actually made in a bundt pan. Double the topping. Then spread 1/2 batter in pan, spread 1/2 the topping on this. Then pour remaining batter ontop followed by the remaining 1/2 of topping. This boosts the flavour big time!
     
  2. Simply spectacular! I used walnuts, and took the advice of some other reviewers and increased the amount of topping by 50%. I agree with others who noted that the apple flavor is not prominent, but frankly the overall cake is so good that it didn't matter to anyone in my house. :) I may increase the amount of chopped apple slightly next time, and I will make sure to once again use very flavorful apples as a way of bringing as much apple taste as possible to the cake. Other than that, I wouldn't change a thing. I made this for a small party of 6 people, and had nothing but crumbs left at the end of the evening. It's a winner, for sure. Thanks so much!

  4. This recipe is delicious! I did have to make a change as I didn't have any nuts so I made a streusel topping instead... sooo gooood! Here's the recipe for the alternate truth :P Streusel Ingredients: 1 cup all-purpose flour 1/4 cup packed light-brown sugar 1 teaspoon ground cinnamon 1/4 teaspoon salt 6 tablespoons unsalted butter, room temperature (approx. 100g) Directions: 1. In a medium bowl, combine flour, sugar, cinnamon, and salt. Using a pastry blender or fork, cut in the butter until fine crumbs form. 2. Using hands, squeeze together most of the mixture to form clumps (generally size of m&m’s or pebbles). It really does live up to everyone's reviews :)
     
  5. This recipe is really simple and the results are very impressive! Such a light, moist cake and not overly sweet! Will definitely make this again. Perfect winter treat! I used a spring form tin, used 3 apples (whatever I had in the fridge) and doubled the walnut mixture - could definitely triple the nut topping!

Tweaks

  1. I increased apples to 3 cups to up the apple flavor (or even more), doubled the walnuts, doubled the amount of topping, added freshly grated nutmeg to the topping, and added a splash of almond extract to bring out the nutty flavor. Next time I will also add some walnuts into the batter.
     
  2. I used brown sugar instead of white. I also added a touch of cinnamon on top before the crumb topping. I doubled the crumb topping and added oatmeal and a touch of flour. Also used crushed almonds in the cake mixture. Absolutely delicious ??
     
  3. Substituted 1/2 cup sugar in the batter with 1/2 cup dark brown sugar. Doubled apples and topping. Added 1/2 cup raisins to batter. Exchanged walnuts with pecans. Required additional 8 minutes bake time.

  4. This time: 3 cups of apples and double the topping. Baked for 50 minutes. Next time: 4 cups of apples, cut into larger, 1/2 inch pieces, so that they do not disappear into the cake. Doubling the topping worked out great.
     
  5. I did add a little milk because I didn't have enough sour cream and changed the topping to streusel :)
