Apple Spice Muffins

"Sweet, fruity, spicy little gems. These luscious muffins are made with whole wheat flour, oatmeal, wheat germ, and fresh apples..so they are as good for the rest of your body as they are for your taste buds! They were emphatically voted a "keeper" by the taste testers at our house. Prep time includes peeling and chopping apples. This recipe makes a pretty big batch, but it is easily halved for smaller families! :-)"

  • Toss apples and sucanat in bowl.
  • Beat eggs, butter, and milk in separate bowl; stir in next six ingredients (flour through baking powder), then add wheat germ and stir to moisten.
  • Fold in apple mixture.
  • Spoon into 24 greased muffin cups; bake at 400 degrees for 20 to 25 minutes, until golden brown and test done.
