ingredients
- 2 cups uncooked no yolk noodles
- 1 (1 lb) pork tenderloin, halved lengthwise, and cut into 1/2 inch strips
- 1⁄4 cup chopped celery
- 2 tablespoons chopped onions
- 1 tablespoon canola oil
- 2 medium tart apples, chopped
- 1⁄3 cup raisins
- 1 tablespoon brown sugar
- 1⁄2 teaspoon seasoning salt
- 1⁄4 teaspoon ground cinnamon
- 4 1⁄2 teaspoons cornstarch
- 1 (14 1/2 ounce) can reduced-sodium beef broth
- 2 tablespoons chopped walnuts
directions
- Cook noodles according to package directyions, and drain.
- Meanwhile in a large skillet, brown pork with celery and onion in oil, and drain.
- Add apples, raisins, brown sugar, seasoned salt, and cinnamon.
- Cook and stir over medium heat for 8-10 minutes or until pork is no longer pink, and vegetables are tender.
- In a small bowl, combine cornstarch, and broth until smooth, and gradually add to the pork mixture.
- Bring to a boil, cook and stir 2 minutes or until thickened.
- Serve with noodles.
- Sprinkle with walnuts.

Made for the FYC Tag Game & I hope you will forgive the chgs I made (some of choice & necessity). I did not use the raisins or walnuts because DH is diet-restricted for both. I used pork tenderloin, extra onion, a few sml carrot coins left from a prior meal & garlic mashed potatoes vs the noodles for the 1st night. DH watched me as I did the ingredient prep here at my PC (for the meat, celery, apple & finally the onion). Suddenly I got an email from him saying "You can never have enough onion". When I managed to stop laughing, I added the extra onion. He later admitted being very skeptical about your recipe as he saw the prep progress, but he had to concede he was wrong & it was excellent (high praise from him). Thx for sharing this recipe. -- Edited To Add: This recipe was 2 meals for 2 of us & was served w/Ramen-type noodles & caramelized onion flatbread the 2nd night. Neither of us thought it possible, but this was even better the 2nd day. :-)
