Apple Turkey Loaf

  • Preheat oven to 350 degrees.
  • Melt margarine in 12 inch skiller over medium heat. Add apples and onion. Cook until onion is soft, about 10 minutes.
  • Let cool, scrape into a large bowl and mix in turkey and all the spices, parsley, egg whites, bread crumbs and milk. Pat into a 9x5 loaf pan. Bake til brown on top and no longer pink, about 1 hour.
  • Drain fat from loaf pan, invert pan and turn loaf onto a platter.

  1. This is a delicious meatloaf. Lovely herby flavor, light texture and the apples gave it a flavor pop.
     
  2. With the exception of using Macintosh apples instead of Granny Smith, I followed the recipe as written. It turned out to be a really tasty loaf. I served it the first night with rings of steamed acorn squash and quinoa cooked in chicken broth. Next day, it sliced up into tasty sandwiches on pumpernickel bread with lettuce, dijon mustard and a cranberry-mayo sauce. Will definitely make this again.
     
  3. I subbed in ground chicken for the turkey and then just followed the recipe. This smells like Thanksgiving dinner in the oven but it's a lot easier. The apple gave the loaf a lighter fresh taste and the herbs were right on the mark for us. Healthy comfort food! how good can you get :D. Served with steamed broccoli, low fat biscuits and Recipe #427429 this was a delicious, hearty and much enjoyed dinner.
