Apple Veggie Burgers

  • Chop the bread very fine, or break into pieces and throw in a food processor, breaking it into crumbs.
  • Transfer to a large mixing bowl, and add the onions.
  • Squeeze the grated apples lightly to remove excess juice, then add to the bowl, along with the bell pepper, ginger, rice, egg, and half the ground oats.
  • Season with salt and pepper to taste.
  • Form mixture into 1 1/2-inch thick patties.
  • Heat oil in a large skillet, over medium heat. Coat the patties with the remaining ground oats and cook for 2-3 minutes per side, until browned slightly.
  • Serve with hot sauce, cole slaw, or whatever else tickles your fancy.

  1. Yummy burgers! Great when just cooked and equally enjoyable next day at room temperature in a ciabatta roll with salad and tzatziki. Because this recipe is so very low in fats, so I'll certainly be making these again, particularly for take-to-work lunches. A couple of years ago, although I had several times made soups which contained either apple or pear and had certainly come across apple in latkes, I don't remember including them in burgers. In the last six months or so, however, influenced by several Zaar recipes, I have increasingly been adding Granny Smith apples to mashed potato, omelettes, quiches, meatballs, including in two recently posted recipes: Recipe #350157 and Recipe #345446. And as flower7 stated, apples do add both moisture and great flavour. Rather than removing the excess juice when making these, I simply added more breadcrumbs to soak up the great-tasting juice. I made these pretty much to the recipe, although I reduced the ginger and added some minced garlic (personal taste preferences) and some fresh basil. I also used roasted red pepper as I was concerned raw pepper much as I love it in a salad would still be raw after only a couple of minutes cooking, and in a burger, I don't like any of the ingredients to be still raw. Thanks for sharing this great recipe, flower! Made for 1-2-3 Hit Wonders.
     
  2. These were great! They are so satisfying. I used an extra egg to get them to hold together better, and used green pepper. I followed everything else exactly. I served them with Thai chili sauce. These make a fabulous vegetarian meal. Thank you!
