- 2 1⁄3 cups flour
- 1 cup buttermilk
- 1⁄3 cup sugar
- 1⁄4 cup applesauce
- 2 tablespoons vegetable oil
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon nutmeg
- 1⁄4 teaspoon ground cloves
directions
- Preheat oven to 400 degrees F. Combine all dry ingredients and mix thoroughly. Combine all liquid ingredients. Add the liquid ingredients to the dry and mix lightly until a batter forms. It will look lumpy, which is perfectly fine.
- Cover a muffin tin lightly with cooking oil spray. Use an ice cream scoop to fill the wells of the tin about 3/4 full. (Secret: Make sure the edges and unfilled portions of the muffin tin are clean. This helps the muffins rise up nice and high.)
- Pop in the oven and bake for about 20 minutes. Serve warm or cool.
- Don't have buttermilk? Just add 1 tablespoon of vinegar to 1 cup of milk and let it set for 10 min!
