Applesauce Oat Pancakes

"These are like having a slice of apple pie for breakfast except healthier. These are great spread with apple butter or topped with glazed apples."

  • In a large bowl, combine the oatmeal, flour, baking powder and spices, mixing well.
  • In a separate bowl, combine the remaining ingredients.
  • Beat with a wire whisk until blended.
  • Add to dry mixture, mixing until all ingredients are moistened.
  • Let stand 5 minutes, then mix again.
  • Spray griddle with non-stick cooking spray and preheat over medium heat.
  • Using 2 tablespoonfuls for each pancake, drop batter onto griddle.
  • Turn pancakes when edges are dry and bottoms are lightly browned.
  • Cook until golden brown on both sides.
  • Note: If the batter becomes too thick while standing, add a tablespoon or more of skim milk.
  • Serve with favorite toppings.

  1. These came out great! Healthy, tasty and easy. I used my own apple puree which was pretty thick so I needed to use more milk, but other than that followed the recipe exactly. Thanks for posting.
     
  2. These were wonderful! I was pleasantly surprised by how fluffy they turned out; with as moist as they were I was expecting them to be heavier. I made a few cosmetic changes, per family preference...omitted the cloves and nutmeg and added a Tbsp of brown sugar (mmm, brown sugar and oats!); I was also short on eggs so I used 1 whole egg instead of 2 egg whites. The kids looked a bit skeptical when they saw the title, but gobbled up the whole batch (the three year old especially loved them and had thirds!!). I had mine with a bit of homemade blueberry jam on top...just like eating a muffin, warm from the oven, for breakfast ~ fantastic! Thanks so much! :)
     
  3. These were really tasty! I made up a double batch and put half of the dry ingredients in a jar for use next time, with the instructions on a label. I will cut back on the nutmeg a bit as I use fresh and it was a bit overpowering!
     
  4. Both of my kids (and I) love these pancakes. I make them the smaller size as recommended by the recipe. They are good with unsweetened apple sauce on top followed by real maple syrup.
     
  5. Loved these healthy, tasty pancakes! These pancakes prove that healthy foods don't have to be tasteless. The spices were spot on and the texture was perfect. I used whole eggs instead of egg whites, mainly because I was too lazy to separate them. Also, I used about 1/4 cup batter for each pancake and I got 12 pancakes. I served these pancakes topped with sauteed cinnamon apples...yum!! Thank you for sharing this delicious recipe...it is definitely a keeper! **Made for Culinary Quest - Suitcase Gourmets**

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
