Applesauce Raisin Cake

"Many years ago, a new neighbor invited me for coffee. She served this delicious, moist cake and a few days later I asked her for the recipe. She wrote it by hand on a sweet little recipe card, which I still have. And 28 years later, she is my dearest friend."

  • Preheat oven to 325. Butter and flour a 10-inch tube pan.
  • Cream butter and sugar until light and fluffy. Stir in applesauce and vanilla.
  • Sift dry ingredients together and then sift over applesauce mixture. Sprinkle with raisins and blend gently.
  • Pour batter into pan and bake approximately 65-75 minutes or until a toothpick inserted in the center comes up clean. Cool in pan 10 minutes then remove from pan to finish cooling.
