Applesauce & Raisin Muffins

  • Preheat oven to 375°F.
  • With mixer beat eggs slightly.
  • Add sugar, oil and applesauce; beat thoroughly.
  • In a separate bowl, mix dry ingredients together.
  • Add dry to the applesauce mixture; mix well.
  • Stir in raisins.
  • Fill greased muffin tins 2/3 full and sprinkle each muffin with a bit of brown sugar.
  • Bake for 15-20 minutes.

  1. We really liked these muffins! I didn't have golden raisins, so I used regular ones, but I soaked them in warm water for 10. min. then drained them before adding them. The brown sugar tops are nice too! Thanks Carol :)
     
  2. Really tasty. I substituted 1 cup par cooked apple chunks, for 1 cup raisons. Also added a bit of allspice.
     
  3. Madea half recipe in a big loaf pan, cooked for about 55 minutes. Easy, pretty quickbread.
     
  4. Very nice muffin. I had to bake something for a church function this morning and I've been wanting to try this. Everyone enjoyed the muffins. BTW, I used regular dark raisins.
     
  5. These were great. I made them to directions, subbing out 1 cup of flour for KA whole wheat white. We will definately make these again.

Hi there. :) What a great site! I am 36 and have been married 15 years. I'm a stay at home mom with two busy children who are like night and day. One eats everything and the other is extremely picky.
