  • Combine flour, baking powder, baking soda, and brown sugar in large bowl. Stir to mix well. Add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened. Fold in carrots, apricots, and walnuts (if you choose to use walnuts).
  • Evenly spread in greased loaf pan. Bake at 350 F for about 45 minutes or until toothpick inserted in center comes out clean. During baking, bread might form some opening crevices, allow for some heat ventilation inside bread. Cool completely.
  • Serve with a spread of peanut butter for some protein.
