Apricot and Pistachio Cous Cous

- 3⁄4 cup couscous
- 1⁄2 cup water
- 1⁄2 cup orange juice
- 7 dried apricots, chopped
- 1⁄4 cup pistachios
- 1⁄4 cup feta (or more)
- 4 basil leaves, chopped
- 1 teaspoon butter
- salt and pepper
directions
- Combine water, orange juice, and butter in a medium sauce pan over medium high heat.
- Bring just to a boil and stir in cous cous. Cover and remove from heat.
- Let stand 5 minutes, until liquid is absorbed. Fluff with a fork.
- Add chopped apricots. pistachios, feta, basil and salt and pepper.
