Apricot Banana Bread

directions

  • Cream butter and sugar; add eggs, mix well.
  • Mix bananas and buttermilk.
  • Mix flour, baking powder, baking soda,and salt; add to creamed mixture alternately with banana mixture.
  • Stir in bran, apricots, and nuts.
  • Pour in greased 9in loaf pan.
  • Bake at 350* for 55-60 minutes, until bread tests done.
  • Cool 10 minutes before removing from pan.

  1. Inez, thank you for posting this. My BF and parents love apricots, and I'm always trying to find ways to incorporate them into different dishes. My only substitution was to use pecans instead of walnuts. Hope you do not mind. This was very flavorful...and not too much banana, but a fantastic sweet/sour mix. Just a perfect blend. PS no trouble getting it out of the pan! Jill
     
  2. Absolutely the best variation on banana bread I have found. I used einkorn flour, and was a little heavy on the apricots.

  3. I changed this a little by substituting apple sauce for the butter, and using an extra banana and whole wheat pastry flour. I also added a teaspoon of cinnamon. My batter was very wet (probably due to the extra banana) and the loaf took an extra 1/2 hour to bake. Even then it was barely done. This makes excellent toast. Cut a thick slice and toast it in a toaster oven or regular oven for ten minutes. Top with butter and enjoy! Thanks for the good recipe.
     
  4. This bread was very yummy! We loved the combination of apricots, bananas, and nuts. The loaf was very moist with lots and lots of flavor. I made this exactly as written except I baked it in an 8-1/2"x4-1/2" cast iron loaf pan for 60 mins. at 325 degrees (cast iron cooks a little hotter). My family loved this and I will definitely be making this again. Thanks for sharing this wonderful recipe.
     
  5. We really enjoyed this loaf, DH loves it and we will be making it again. The bran cereal gives a nice nutty taste adding to the walnuts. One of the better banana loaves I've made over the years and we like the addition of the apricots. Thanks for sharing a keeper!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
