Apricot Banana Squares

"Several years ago Great-Grandma passed away and I inherited her collection of handwritten recipes. This is one of those receipes. Another use for ripe bananas."

  • Preheat oven to 350 degrees.
  • Cream the margarine and brown sugar.
  • Blend in the preserves, eggs and vanilla.
  • Sift together the flour, baking powder, soda and salt.
  • Add alternately with the bananas, mixing well after each addition.
  • Stir in nuts.
  • Pour into a greased 13 x 9 inch baking pan.
  • Bake 35 to 40 minutes.

  1. I had bought some apricot preserves for another recipe and had 3/4 of a jar left, which my DH said he didn't like so made this cake. He loved the cake - I didn't tell him there were apricot preserves in it until after he ate it. I will probably be buying more apricot preserves just to make this again.
     
  2. Wow, this is one great recipe. I followed the recipe exactly and these Banana Squares turned out perfectly! This cake was so very moist and the flavour of the banana with the apricot and nuts was just the thing for DH, who adores anything with nuts in it. He loved it! A very easy recipe to follow and the outcome of this recipe was fantastic. Thanks PaulaG, will be making this again.

  4. These moist bars have an absolutely delicious flavor! I loved the blend of apricot and banana. I made a quick glaze of melted butter, apricot jam and icing sugar. It just seemed to compliment the bars extremely well. Everyone who tried one was so enthusiastic about them. I am too. I may just buy bananas to make this.
     
  5. You're right PaulaG, this is another great use for ripe bananas. This baked into a very moist snack cake that was gone before the end of the evening (there was an extra sixteen year old boy in the house). The kids said it was better than banana bread because it was like a cake and because of the fruity bits of apricot. It's been placed on the kids'"make it again soon, Mom" list. Thanks!

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
