Apricot Barbecued Chicken

"This looks so scrumptious and sweet, I can't wait to try it. It's from the Jan/Feb issue of Taste of Home's Quick Cooking magazine, and it's supposed to be very kid-friendly!"

  1. Oh Kree...I made you BBQ chicken for dinner, I just cannot say enough about it, it was so delicious!. I made mine with thighs and legs, and doubled the sauce recipe, (added more garlic then stated) what a wonderful dinner we had. I served it with brown rice....this chicken recipe is is highly reccomended, and so easy to put together. Thank you Kree for posting, I will be making this often...KC :-)

  2. Oh my, this is delicious, we ate the whole thing. I Made the recipe just like it said except, I used boneless, skinless chicken thighs. Delicious served over rice. I will be making this again & often DH loved it. Thanks Kree.

  3. This was quick, easy, and tasty. It was a nice variation on the Catalina dressing and apricot preserves or Catalina and cranberry sauce chicken recipes I have made in the past. The only changes I made were to add a couple extra cloves of garlic and some black pepper. Served it over rice with some steamed broccoli. (13)

  4. Simple and quick. I had all the ingredients already in my kitchen and my family loved it.

  5. Saved dinner! I went to make a recipe that I made eons ago, but must have copied it wrong and it was a mess! Was low on time and ingredients, and really wanted a sauce with apricot preserves. Some how I found this! And some how I had everything for it! Including about 1/4 cup honey bbq sauce left. Made with drums and Fiance thought it was great! Little did he know I scrambled 30 minutes earlier to just get something in the oven!! Very good! Very simple!

Tweaks

  1. I made this dish last night just the way the recipe is written. YUM! I don't see this serving 4-6 people though. This would maybe serve 2 with average appetites. Non-the-less, it was tasty. It may even be good on a toasted hamburger bun, or substitute the chicken with shredded beef or hamburger. I'm thinking the sauce alone would be a great sweet-tasting baste on ribs. So many possibilities! I will make this again. I'm always up for something easy and yummy!

I'm a real estate agent in the lovely city of Rochester, New York. That's not what I expected to do with my life. I got my bachelor's in psychology, my masters in literacy education, and I taught high school special education for two years. Then I discovered that helping people find the homes of their dreams was my real passion. I've been doing it for over two years now and still absolutely love my career. Other than that, I have a very spoiled Border Collie mix named Bear that I adopted from a local shelter in spring '08. He's gorgeous and fun and brings me great joy. Now if only I could find a man like that... LOL!
