  1. Put couscous brown sugar, cinnamon stick and apple cider in a medium pot over high heat. Chop 1/2 cup dried apricots.
  2. Add the apricots to the pot. When the cider comes to a boil, cover the pot and turn off the heat.
  3. Let the couscous steep for about 5 minutes. Fish out the cinnamon stick. Fluff the couscous with a fork, taste and adjust the seasoning. Can use 1/4 teaspoon ground cinnamon instead of the cinnamon stick.
