  • In 2 qt.
  • saucepan soak apricots in cranberry juice for 10 minutes.
  • Add cranberries, sugar, and ginger; heat to boiling.
  • Reduce heat and cook uncovered 10 minutes, stirring occasionally.
  • Cover and refrigerate till well chilled.

  1. i didn't have dried apricots let. but i did have some dried tropical fruit- pineapple, mango, papaya, figs so i substituted, i made half the recipe as i had only 1/2 bag of cranberries left, delish!
     
  2. I made this using frozen cranberries, sugar in the raw, apricot preserves and grated fresh ginger. I cooked it until the cranberries all "popped." easy and delicious. I had Thanksgiving in July!
     
  3. I've been making this for several years now, its become a highly requested family favorite, great for any holiday. Be sure to wash sort and de-stem your cranberries.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
