Apricot Yams

"I believe this recipe came from a "Southern Living" cookbook. Everyone raved over the taste. It's a great recipe for the holiday season. The yams I used were huge, so I adjusted the portion size. You could probably stretch this out even further as a side dish with all the other foods you will be serving. "

  • Quarter the prepared yams and place in a buttered casserole.
  • Combine brown sugar, cornstarch, orange peel, cinnamon and apricot juice in saucepan.
  • Cook over medium-high heat until sauce thickens.
  • Add apricots, butter and pecans.
  • Pour over yams.
  • Bake at 375 degrees for 25 minutes or until heated through.

  1. LOVE THOSE YAMS, & these, too, for that matter! I did cut most of the ingredients back by almost 2/3, but the last 3 (apricots, butter & toasted pecans) by only 1/2, so the resulting dish, I realize, was a little different than written! Still, IT WAS GREAT, & I'll definitely be making this (as a whole recipe!) during the upcoming winter holidays! Thanks for sharing! I recieved him from a bus driver at the school I use to work at and he is one of the greatest blessings I have recieved. <br>I have two grown children and 3 grandchildren who live in Michigan where I was originally born and raised. I moved to Ohio 6 years ago. I love and miss my family very much but we talk often and see each other when we can. <br>My top of the list blessing was recieving a phone call by one of my grandsons all on his own. (mom didn't even know he called me...lol.) I asked him how he got my phone number and he said you were <br>number one on the caller id list...awwwww. ..I love him so much. <br>I live in a semi-rural area and enjoy the 4 seasons as I did in michigan. Although I live 225 miles away the weather is the same. Especialy in winter! brrrr...But I am used to it. <br>I love to cook,write poetry, sing, draw and sculpt and I'm planning on planting an herb garden this summer. I had three herbs in the front yard <br>but my neighbor killed 1 and the other died on it's own. (At least I think so...lol.
