  • Arrange salad ingredients except for lemon, in a bowl. Squeeze lemon juice over salad; chill in fridge for at least 15 minutes.
  • Mix the dressing ingredients. Pour over chilled salad. Toss, then serve.

  1. This salad has a lot going on it is and it is great! I used green leaf lettuce since that is what I got from my co-op, green onion rather than red (personal preference) and a fresh peach which I wish was a little more ripe so it would have been sweeter (no fault of the recipe). This was a filling healthy lunch and could easily be made for dinner! Made for I Recommend Tag.
     
  2. Great chicken salad, this is! Used a wonderful tasting fresh peach & that along with the other fruits, veggies & nuts made for a very satisfying salad! The only thing I changed was using a couple of shakes of lemon pepper instead of the usual S&P! Thanks for sharing the recipe! [Tagged & made in Please Review My Recipe}
