Armenian Rice Pilaf

ingredients
- 1 cup Uncle Ben's converted brand rice
- 2 tablespoons orzo pasta or 2 tablespoons skinny noodles
- 1 teaspoon salt
- black pepper
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 tablespoon butter
directions
- Heat oil and brown orzo.
- Add rice and stir, coating rice with oil so grains will be fluffy when cooked.
- Add chicken broth, salt and pepper. Broth should taste a little salty.
- Cover and cook slowly for 20 minutes or until all broth is absorbed. Add currants and nuts if desired.
- Add butter and stir.

I always enjoy a good Armenian pilaf and this is very good though I did use basmati rice instead of Uncle Ben's. For the pasta part, I used fideo - a variety of skinny noodles already broken up into 1-inch lengths - and doubled the amount. I used a good homemade broth (a combo of chicken & pork) and no salt. I did have to add a little extra liquid (water) during the cooking (about 1/3 cup or so). I added the butter with the olive oil at the beginning and tossed in 1/4 cup of golden raisins (was out of currants) when adding the broth. After the rice was done, I took a cue from another Armenian pilaf recipe and added the juice of 1 lemon to perk things up. Delicious with some roasted chicken and homemade tomato chutney. Thanks!
