Armenian Rice Pilaf

"Very simple but delicious rice dish. You can add currants or nuts to make it fancy. If using canned chicken broth, use one can plus water to make the two cups."

  • Heat oil and brown orzo.
  • Add rice and stir, coating rice with oil so grains will be fluffy when cooked.
  • Add chicken broth, salt and pepper. Broth should taste a little salty.
  • Cover and cook slowly for 20 minutes or until all broth is absorbed. Add currants and nuts if desired.
  • Add butter and stir.

  1. I always enjoy a good Armenian pilaf and this is very good though I did use basmati rice instead of Uncle Ben's. For the pasta part, I used fideo - a variety of skinny noodles already broken up into 1-inch lengths - and doubled the amount. I used a good homemade broth (a combo of chicken & pork) and no salt. I did have to add a little extra liquid (water) during the cooking (about 1/3 cup or so). I added the butter with the olive oil at the beginning and tossed in 1/4 cup of golden raisins (was out of currants) when adding the broth. After the rice was done, I took a cue from another Armenian pilaf recipe and added the juice of 1 lemon to perk things up. Delicious with some roasted chicken and homemade tomato chutney. Thanks!
     
  2. Make this all the time in my house we have for year. I usually saute the orzo in cooking spray instead of oil and forgo the butter. Also works well with veggie broth
     
  3. Very good dish. I used 1 tsp. salt and mixed it into the broth. I doubled the orzo only, to 4 tbsp. I had it with recipe#137262 but could see using for many other dishes. I didn't add in any nuts or anything this time. Thanks for a nice and easy rice dish.
