- 1 (14 ounce) can artichoke hearts, drained and quartered
- 1 (2 1/4 ounce) can sliced ripe olives, drained
- 1⁄3 cup green pepper, sliced
- 1⁄3 cup thinly sliced green onion
- 3⁄4 cup Italian salad dressing
directions
- In a bowl, combine artichokes, olives, green pepper, and onions.
- Add dressing and toss to coat.
- Cover and refrigerate for at least 30 minutes.

I just made this recipe for about 20 Vets in a SRO and it really went over well. What I like about the recipe is it\'s a great base recipe and can be made a little differently each time. If you wanted to serve it as a summer meal chop up salami peppperoni and provolone cheese. if you want to serve it at a pot luck throw in a pound of cooked pasta to stretch it. i\'m sure you can come up with a hundred other variations.

I made this almost exactly as written to take for lunch. This is a terrific recipe! While I was eating it at my desk, a co-worker wanted to know what smelled so good. :) I like this recipe because it is so quick and versatile. I added some cooked green beans that I had. I can see myself adding red peppers, mushrooms or tomatoes next time... Thank you so much for sharing this tasty recipe!!
