Artichoke Rice Salad

"This is one of the few recipes that I prefer to use a packaged mix. You may add some cooked shrimp or chicken to this salad for a tasty change."

  1. I was sceptical.... and I was wrong. I gave some to a friend and she could not stop raving about it. The flavor combination sounds wierd but is a flavor explosion. I loved it. I tried to think if I would omit or add any ingredients but decided it needed all these odd ingredients to make it what it was. The only thing I may do different is use low sodium rice a roni or wild rice cooked in chix broth. I am not a sodium prude but this was a little much. You've gotta try it!
