  • Begin by making the vinaigrette. Combine the vinaigrette ingredients in a mixing bowl and whisk together until the sugar and salt are dissolved. Add the olive oil in a thin stream while whisking until vinaigrette is emulsified.
  • Now prepare the salad. In a large bowl, toss the arugula, sliced red onion, toasted almonds and cranberries. Dress with balsamic vinaigrette just before serving and toss gently to coat everything. Divide amongst plates and serve immediately.

  1. I have made this about 4 times and each time to different groups of people and it always gets rave reviews! I cut back on the salt and the oil and use a mixture of lettuces along with the rocket/arugula. I'm not a "salad person" but I LOVE this salad!

  4. Good salad that's quick and easy to fix. The dressing was very tangy with a strong balsamic flavor. I used the amount called for and would hold back a bit next time, it overpowered the arugula a bit. Love the combination of peppery arugula with crunchy almonds, sweet cranberries, anmd purple onion. Thanks for sharing the recipe!

  1. I had to use romaine lettuce instead of arugula because my arugula went bad, but it was still good and the dressing was very easy and tasty.

My goal in life was to find the perfect sticky toffee pudding recipe. I have now found it in Carol's Sticky Toffee Pudding. This is the most amazing dessert (next to my carob cake) I've ever tasted.
