  • Cut off the arugula stems.
  • Tear the leaves into bite sized pieces.
  • In a large bowl, whisk together the oil, vinegar, and salt and pepper to taste.
  • Add the arugula and toss well.
  • Pile the salad on two plates.
  • With a vegetable peeler, shave the cheese over the salad.

  4. Simple, elegant, and delicious!! I love arugula, I don't see the need to ever eat iceberg lettuce or one of those other tasteless lettuces, I always eat a more flavorful green such as arugula when I have salad! And with good balsamic and olive oil plus parmigiano-reggiano, you can't go wrong!
     
  5. I love arugula... it's peppery-ness is so fresh and unique! This salad is perfect as it is, but I also love to add dried cranberries for a touch of sweetness. (By the way... I got my paws on some Boot Jack olive oil from Paso Robles. Sooooooo incredible in this salad!) Thanks for a simple and perfect recipe!
