"5-Ingredient Fix Contest Entry. Springtime is the perfect time to make an asparagus quiche using Simply Potatoes Shredded Hash Browns as the crust forming what looks like a birdsnest. Fun!"

ingredients

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
3 large eggs
1 ¹⁄₂ cups cream (half and half)
8 ounces Kraft Shredded Sharp Cheddar Cheese
10 stalks asparagus, chopped

directions

Preheat oven to 425 degrees. Coat 9-inch glass deep dish pie pan with nonstick spray. Place Simply Potatoes onto the bottom of the pan pressing down and up the sides forming what looks like a birdsnest. Combine eggs and cream. Add cheese and asparagus to egg mixture, pour over potatoes.
Bake for 30 to 40 minutes until set.
