Asian Asparagus Salad

  • Chop off the tough ends of the asparagus and cook in boiling water for 3 minutes.
  • Remove the asparagus and allow it to cool
  • In a bowl whisk oils, soy sauce, ginger, orange juice, honey and orange zest.
  • In a large bowl, place the asparagus, drizzle the dressing over and toss well to coat
  • Arrange in a platter and garnish with sesame seeds.
  • Variation: Garnish with roughly chopped roasted peanuts for an added crunch.
