ingredients
- 1⁄3 cup asian-style dressing, made with sesame seeds
- 2 tablespoons lime juice
- 8 ounces cooked chicken, shredded
- 6 ounces coleslaw mix
- 1 cucumber, halved lengthwise seeds scraped out and thinly sliced
- 1 red bell pepper, cut into narrow strips
- 1⁄4 cup cilantro, chopped
- 5 ounces baby greens
- 1⁄4 cup cashews or 1/4 cup peanuts, chopped
directions
- Whisk dressing and lime juice in a large bowl. Add chicken, coleslaw, cucumber, pepper and cilantro.
- Serve on greens and sprinkle with nuts.

Excellent salad! Just loved the blend of flavors and textures in here. Definitely no need for noodles in this! I used a 50/50 mix of spinach and baby greens, broccoli slaw mix, and a homemade Asian-style dressing, to which I added some toasted sesame seeds along with the specified lime juice. There is lots of crunch and plenty of flavor in here! Thanks for sharing!

lovely easy salad! dont really know what Baby greens are, but assumed it was a lettuce mix, so I threw in a handful :) used lemon juice, cashews, and left out the cilantro.<br/>I used a generic salad dressing, and served crisp noodles and the sesame seeds on the side.<br/>made for Aussie swap, april 2011

What a great salad! I love the cilantro in it, it "happies up" the whole salad with bright flavor. For the dressing, I used Recipe #23367, replacing the sugar with Splenda. And the only change I made to the salad recipe was that I omitted the nuts. Made for National Diabetes Month 11/10. Thanks for sharing Debbwl!<br/>(Forgot to add that I used green bell pepper instead of red as the red ones are going for a small fortune in my local grocery for some odd reason!)
