Asian Coleslaw

"I guarantee when you taste this you will be making this all the time! If you are not a lover of sesame oil then just use 6 tablespoons vegetable oil, to make things easier you may use packaged coleslaw mix or broccoli slaw, I suggest to pour the dressing onto only the salad you will be using right away as it tends to get soggy if left in the fridge with the full amount of dressing ;-)"

  • In a medium bowl whisk together all dressing ingredients until well blended.
  • In a large bowl toss together cabbage, red bell peppers, carrots, green onions and cilantro.
  • Pour the dressing over and toss to combine.
  • Season with black pepper if desired.
  • Top with chopped peanuts.
  • *NOTE* if you are using ramen noodles they must be toasted to avoid turning soggy in the coleslaw.
  • Slightly chop the noodles.
  • Place on a baking sheet.
  • Bake at 350°F for about 8-10 minutes, tossing once or twice while baking.

  1. I like the flavor of this. I prefer a little heat in it so will add some next time. My peanut butter was pure peanut so I added a dash of sugar. I also felt it needed salt. I like the idea below of putting the dressing on noodles.
     
  2. This was excellent! I substituted sesame tahini for the peanut butter, and added some crushed red pepper flake (about a tablespoon), and this was great on cold soba noodles with veggies. I was really just looking for a good asian-style dressing for cold noodle salads, and I think this was just the ticket. I even put some of the dressing onto some shrimp before throwing them onto the grill and even that was delicious. The only thing I would want to change would be the spice level- I LOVE spicy food!. I think I will add some chili-garlic paste to it next time around, but this is definitely going into the book for future use! Thanks so much for the recipe!!

  4. This was very good, but I prefer the sweeter version of Asian coleslaw so I added 2 tablespoons of granulated sugar to the dressing. With the sugar, it was 5 stars. Thanks for the recipe!
     
  5. First of all, this had a great flavor! I used a bag of broccoli slaw, and added green onions and cilantro. (I didn't have the red peppers.) The slaw had good flavor; however, I would suggest not putting the dressing on the whole batch, if you're not going to eat it all at once, as the slaw gets too soggy, after sitting.
