- 16 ounces spaghetti
- 2 teaspoons canola oil
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1 lb stir fry vegetables, frozen
- 3⁄4 cup water
- 1⁄4 cup barbecue sauce
- 1 tablespoon creamy peanut butter
- 1⁄4 cup roasted peanuts, chopped
directions
- Cook spaghetti according to package directions, drain and rinse.
- Heat a large nonstick skillet over medium-high hear. Add oil and saute garlic and chili powder until golden, about 1 minute.
- Add water and vegetables. Cook until vegetables are tender-crisp, about 3 minutes. Add the BBQ sauce and peanut butter, stir until sauce is smooth. Toss sauce and vegetables with spaghetti and garnish with chopped peanuts.

This meal was awesome on its own, despite my skepticism about the barbecue sauce, it tasted super good and my family enjoyed it. I did not actually have a bag of frozen vegetables when I made it, but fresh vegetables worked fine. I suggest using less than 3/4 cup of water, maybe 1/2 cup to make it creamier/ thicker if that's your preference. Also, I added some lime and cilantro at the end because it tasted too barbecue-y on my tongue but if I wasn't such a perfectionist I would have left it and it would have been fine. All in all, this was a super quick throw together asian meal that tasted great!
