- 1 lb salmon fillet, skin removed and picked over for bones
- 1 large egg
- 1 tablespoon soy sauce or 1 tablespoon low sodium soy sauce (if you are salt-sensitive)
- 1 tablespoon minced fresh ginger
- 1⁄2 cup panko breadcrumbs
- 1 -2 teaspoon chopped chives
- 2 tablespoons chopped red onions
- 1 tablespoon fresh lemon juice
- sea salt, to taste

Ginger Lemon Sauce
- 1⁄4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 1 tablespoon fresh lemon juice
- 1⁄4 cup soy sauce or 1/4 cup low sodium soy sauce
- 1⁄2 teaspoon sugar
directions
- To make Ginger Lemon Sauce: add all the ingredients to the container of a food processor; pulse until mixture is smooth; set aside.
- To make burgers: cut the salmon fillet into 1/2 inch cubes; set aside.
- In a large bowl, combine the egg, soy sauce, and ginger using a whisk.
- Add in the salmon cubes, panko, chives, onion, and lemon juice; season with salt and pepper to taste.
- Mix, using a wooden spoon, until the ingredients are evenly distributed.
- Take mixture and shape into 4 flat patties.
- Lightly coat each patty with vegetable oil cooking spray.
- Grill over medium heat for about 5 minutes on each side or until done; turn carefully to prevent breaking.
- Serve burgers on sesame rolls and top with Ginger Lemon Sauce.
- Use extra sauce for dipping if desired.
