Salad
- 6 cups thinly sliced green cabbage (1/2 medium head)
- 2 cups thinly sliced red cabbage
- 1 small red bell pepper, diced
- 1 small yellow bell pepper, diced
- 3 medium carrots, peeled and shredded
- 4 large green onions, diced
- 1⁄2 cup chopped fresh cilantro
- 1⁄3 cup chopped roasted peanuts

- 1⁄3 cup rice vinegar
- 1 tablespoon asian style sesame oil
- 1 tablespoon vegetable oil
- 3 tablespoons soy sauce
- 1 tablespoon sugar
- 2 tablespoons grated peeled fresh ginger
- 1 1⁄2 tablespoons minced garlic
- 1 jalapeno pepper, seeded and finely chopped
directions
- Toss salad ingredients in a large bowl. Dress immediately before serving to preserve crunchiness.
