Asparagus and Egg Bake

- 8 asparagus spears, cut into bite-sized pieces
- 4 eggs, room temperature
- 1 teaspoon garlic
- salt
- pepper
- 2 tablespoons parmesan cheese
directions
- Preheat the oven to 400 degrees.
- Spray the bottom of 2 small baking dishes with nonstick cooking spray (I used two 6 oz. au gratin dishes).
- Place the cut up Asparagus in the bottom of the each dish and bake for 10 minutes.
- Remove the dishes from the oven and carefully slide two eggs on top of the asparagus per dish, and bake for five minutes.
- When the eggs appear slightly set, remove from the oven and top with a sprinkle of garlic, salt, pepper and Parmesan Cheese.
- Place back in the oven for 3 minutes.
