Directions

  1. Preheat the oven to 400 degrees.
  2. Spray the bottom of 2 small baking dishes with nonstick cooking spray (I used two 6 oz. au gratin dishes).
  3. Place the cut up Asparagus in the bottom of the each dish and bake for 10 minutes.
  4. Remove the dishes from the oven and carefully slide two eggs on top of the asparagus per dish, and bake for five minutes.
  5. When the eggs appear slightly set, remove from the oven and top with a sprinkle of garlic, salt, pepper and Parmesan Cheese.
  6. Place back in the oven for 3 minutes.
