  • Preheat the oven to 400 degrees.
  • Spray the bottom of 2 small baking dishes with nonstick cooking spray (I used two 6 oz. au gratin dishes).
  • Place the cut up Asparagus in the bottom of the each dish and bake for 10 minutes.
  • Remove the dishes from the oven and carefully slide two eggs on top of the asparagus per dish, and bake for five minutes.
  • When the eggs appear slightly set, remove from the oven and top with a sprinkle of garlic, salt, pepper and Parmesan Cheese.
  • Place back in the oven for 3 minutes.
