- 8 slices Italian bread
- 1 tablespoon olive oil
- 1 garlic clove, crushed
- 1 bunch asparagus, trimmed, blanched and halved
- 8 slices brie cheese (about 60g)

Dressing
- 1 tablespoon olive oil
- 1⁄2 lemon, juice and zest of, grated
- 1 teaspoon honey
- 1 garlic clove, crushed
directions
- Arrange bread on a baking paper lined baking tray. Combine oil and garlic. Brush evenly over each slice of bread.
- Bake slices of bread in a hot oven 200C for 5 to 10 minutes or until lightly golden.
- Top each base with an equal amount of asparagus. Top with slice of cheese.
- Prepare Dressing - Whisk all ingredients together, set aside.
- Return bruschetta to oven for 5 minutes or until cheese begins to melt. Serve immediately, drizzled with a little dressing.
