Directions

  1. Break ends from asparagus and steam 5-7 minutes. Drain and set aside.
  2. Heat 6" pan and add butter.
  3. Beat eggs, add herbs and seasonings.
  4. Pour eggs in pan, allow to set. Pull sides in so liquid escapes to pan.
  5. When set, turn over for a few seconds.
  6. Place on plate and set asparagus on omelet. Fold, and top with yogurt and the Tobasco.
  7. Garnish with a sprig of parsley.
