directions

  • preheat oven to 350.
  • boil potatoes in pot and then simmer 20-30 minutes.
  • remove and when cool enough to handle peel and mash.
  • meanwhile boil asparagus for 3 minutes, drain and rinse with cold water.
  • in a saute pan add oil and saute onions until softened.
  • add onions and oil to mashed potatoes.
  • add asparagus, salt and pepper, add egg, mix well.
  • pour into greased baking dish, sprinkle with paprika.
  • bake 50 minutes, until lightly browned.

  1. We really enjoyed this kugel, thanks for sharing Chia!! Didn't change a thing, didn't even scale it down for two. We ate about half of it tonight and will finish it off tomorrow,(and probably the next day). I peeled the potatoes first and cut them in small pieces to boil them, then mash them. Was there a reason not to peel? The asparagus and potatoes went well together, but we were surprized that we could hardly taste the onions,we expected a stronger onion taste. I did use two medium. The paprika gave it a nice presentation. We enjoyed it very much but found it a teeny bit dry, DH put margarine on his, I will make it again, it would be a good company dish.
     
  2. Asparagus is a favored vegetable in my house. This was interesting and a different preparation for me. The only minor alteration I made was to reduce the oil to 3 tablespoons. Tasted wonderful and has that comfort foodish quality. Enjoyed for lunch with a side salad--very nice. Thanks for posting.
     
  3. My girl friend and I absolutely loved this and we had left overs that were just as good as the freshly cooked. We will definitely be making this again.
     
  4. This was a flavorful side dish. I did cut back on the amount of onion, but otherwise followed the directions. Asparagus is a favorite around here, and kugel was a different prep for us. We will make this again.

<p>latest update, as all my fb friends know i have been very ill for the past 4 mos, but now i am on the road ro recovery. i've had 2 surgeries and broke nt elbow a week after the first one, which basically incapacitatedme forr 2 mos. happy to say i am doing pt, anf will hopefully be able to cook again</p> <p>i stopped working so i could spend more time in my fla house renovating, but this was a minor setback, going to do the bathrooms this summer.</p> <p>&nbsp;</p> <p><br />in NY i used to have an (at home) jewelry business, but i incorporated it into the store's gift dept., they sell it for me now. <br />cooking is my passion, my hobby, my relaxation, but i love going out for a good meal anytime. being born and growing up in manhattan, ny gave me the opportunity to try many new foods over the years, in many great restaurants. and travelling with my dh enlightened me to the wonderful ingredients and cuisines of san francisco, among other places. <br />the new corporate spouse deal is to do a day of cooking lessons/lunch, and shopping, so i have seen demo classes in ft lauderdale, san antonio, atlanta in the past few years plus taken a few cooking classes in chinese dim sum and noodles in joseph poon's, in philly. <br />several years ago i had the pleasure of being on several of the food network shows, ready set cook and taste test, which was like food jeopardy. i didn't win either, but it was so much fun!
