Asparagus Wrapped in Bacon

  • Cut 1/2 inch to 1 inch off the end of the asparagus.
  • The asparagus should be at least 4 to 5 inches long.
  • Toss the asparagus with olive oil- just enough to lightly coat and add a touch of salt and pepper (optional).
  • Separate into bundles (approx. 4 to each bundle) and starting at bottom of asparagus bundle, wrap with 1 slice of uncooked bacon.
  • Repeat with the rest.
  • Place on broiling pan and bake at 500 degrees for 5 minutes, turn them over and bake another 5 minutes.
  • Reduce oven to 350 degrees and bake for 15- 20 minutes.

  2. Great recipe - I had rather large asparagus so I only used 2 per bundle. I had extra time, so I also peeled the bottoms with a vegtable peeler and it worked out great. Most important thing though, when it was done baking I drizzled Balsamic Vinegar over the bundles and it was fantastic!
     
  3. Can't believe I've never had roasted asparagus before, just steamed or boiled. This will be my main asparagus cooking method from now on. Impressive and delicious.
     
  4. I enjoyed this for an elegant way to serve asparagus. I used thick cut asparagus and stretched it around 5-6 to a bundle. The bacon was done perfectly, browned to perfection and the tips of the asparagus was a bit crispy - just as we like it. If you like your asparagus less done watch the oven. Thanks for an easy recipe that looks great
     
  5. I make this all the time and absolutely love it. My BF, who doesn't like asparagus, likes this too. I do 2 things different though, first I wrap each individual piece of asparagus in half a piece of bacon. I find I prefer the bacon a bit thinner and if you cut it in half it stretches to the perfect thickness. The other thing I do is grill the asparagus, the bacon comes out nice and crispy and the asparagus come out with just the perfect amount of crunch.
