  • 1 14 cups chocolate cookies, crubs
  • 13 cup butter, melted

  • 1 (8 ounce) package cream cheese, softened
  • 1 cup plain yogurt
  • 14 cup strong coffee or 14 cup espresso
  • 2 eggs, at room temperature
  • 12 cup sugar
  • 1 14 teaspoons cornstarch

Directions

  1. Preheat oven to 325F.
  2. Crust:.
  3. In a small bowl, mix cookie crumbs and butter until combined.
  4. Spoon 1 1/2 tablespoonfuls of crumb mixture into 12 paper lined muffin cups.
  5. Press firmly into the bottom of each cup.
  6. Filling:.
  7. In a large bowl, beat cream cheese with electric mixer until creamy.
  8. Add yogurt slowly.
  9. Gradually add remaining ingredients.
  10. Spoon cream cheese mixture evenly into crusts.
  11. Bake 20-30 minutes or until cheese cakes have set.
  12. Note: For an elegant presentation, drizzle with melted chocolate or dust with cocoa powder or icing sugar.
