Crust
- 1 1⁄4 cups chocolate cookies, crubs
- 1⁄3 cup butter, melted

Filling
- 1 (8 ounce) package cream cheese, softened
- 1 cup plain yogurt
- 1⁄4 cup strong coffee or 1/4 cup espresso
- 2 eggs, at room temperature
- 1⁄2 cup sugar
- 1 1⁄4 teaspoons cornstarch
directions
- Preheat oven to 325F.
- Crust:.
- In a small bowl, mix cookie crumbs and butter until combined.
- Spoon 1 1/2 tablespoonfuls of crumb mixture into 12 paper lined muffin cups.
- Press firmly into the bottom of each cup.
- Filling:.
- In a large bowl, beat cream cheese with electric mixer until creamy.
- Add yogurt slowly.
- Gradually add remaining ingredients.
- Spoon cream cheese mixture evenly into crusts.
- Bake 20-30 minutes or until cheese cakes have set.
- Note: For an elegant presentation, drizzle with melted chocolate or dust with cocoa powder or icing sugar.
