  • Dissolve yeast in sugar and 1/2 cup of water. let it froth for 10 minutes.
  • Put the flour in a large bowl. Add the yeast mixture and remaining water gradually.
  • Beat vigorously into a creamy lump-free batter.
  • Cover the bowl with plastic wrap and leave in a warm place for an hour.
  • To make the syrup, bring the water to a boil with sugar and lemon juice. Simmer for 10 minutes. Stir in the rose water and simmer for a few more seconds. Allow to cool.
  • Heat an oiled skillet until it is very hot. Reduce the heat to medium.
  • Pour a half ladle of batter into the skillet, allowing it to spread. fry only one side of the pancake. when little holes appear, lift them out and set them on a platter to be stuffed.
  • Put a heaping tablespoon of stuffing in the middle of each pancake. fold in half and pinch the edges tightly to allow no filling to escape.
  • Deep fry a few at a time in medium hot oil about 1 inch deep. Remove when they turn pale brown.
  • Drain on paper towels. Dip, while hot, in the syrup. pour the remaining syrup over the top of all of them and serve either hot or cold.

  2. These were delicious! Be warned though: they are very rich and sweet. Also, be careful not to cook too long at the beginning, or you won't be able to fold them.
     
  3. I am sitting here eating the Ataif, trying to find the words to describe the sweet goodness in my mouth. Nothing comes to mind except yum. Anyone who enjoys Middle Eastern food should love this delicious treat. The only thing I did differently was use 2 tbsp sugar & 2 tbsp brown sugar in the stuffing. I also used orange blossom water instead of rose water in the syrup.

My Egyptian mother in law taught me how to make these but in Egypt you buy the little pancakes already made so all we did was make the filling and then cook them in the sugar water. I have been craving these every since I returned to the US and now I can finally make them and eat them again. Thanks so much!!!!
     
  5. Yes!! OK I didn't get to try them myself but DH raved that MIL liked them a lot. I made these for my FIL's diwaniya (male gathering) and plan to make them again during Ramadan. I changed the recipe but used it as a base that I will go back to again. I made the batter as in recipe#436109, syrup as in recipe#451788 with both orange blossom and Iranian rose water's, canola oil to fry & since I didn't have any walnuts I used a combination of crushed pine nuts, almond flour, pretty pulverised but still not like normal flour consistency, a bit of dried coconut, plus the sugar and cinnamon. OK so that was deviation but it worked and I kept the base the same by frying them and it was so easy and quick with my change in batter which I will use again next time plus the syrup was very good so I may try the filling written in this recipe when I make these again. Oh and I did not use a lot of syrup as these men don't like cloying sweet. A make again for sure!
