Au Gratin Potatoes

"The boxed version of these potatoes leaves alot to be desired. My father actually called them "hog rotten" so after a few trys I came up with this, my family loves it. I like to try different variations on the cheese. I also like to use green onion dip instead of the sour cream."

  • preheat oven to 350 degrees.
  • Use 1 tbls butter to coat a 1 quart casserole dish.
  • put milk, sour cream, butter, cheese wedges, cornstarch in small sauce pan, heat until just before boiling, stiring occasionaly.
  • Layer potatoes and grated cheese in casserole until all are used.
  • Pour milk mixture over potatoes.
  • Cover with foil.
  • Bake 45 minutes. Uncover bake another 20 minutes until potatoes are cooked and top is bubbly and brown.
  • Let set for about 8 minutes before serving.

I am a single mother,who lives on a small farm. I like to read, cook and garden. I have spent most of this summer canning. I have 37 tomate plants in the garden. So I am looking for new ways to put them up. I collect cook books and currently have over two hundred. I am not afraid to try new things and will try anything once. I often whip up something that in theory sounds good in my head. Take a recipe and put a new twist on it. One of my favorite books is a 1947 copy of Farmers Canning and preserving cook book. Found it at a yard sale for a quarter. Have gotten my money out of it a thousand times over.
