- 2 cups yukon gold potatoes, sliced thin
- 1⁄2 large onion, sliced into rings
- 2 tablespoons extra virgin olive oil
- 1 tablespoon butter or 1 tablespoon margarine
- 1⁄4 teaspoon Morton nature seasons seasoning blend
- 1⁄4 teaspoon cayenne pepper (more to taste)
- salt and pepper
- 1⁄4 cup Mexican blend cheese, shredded
- 1⁄3 cup 1% low-fat milk
directions
- Preheat the oven to 350°F.
- Prepare your baking dish by adding the olive oil.
- Peel the potatoes, cut in half, then slice thinly. Slice the onion into thin, 1/4 inch slices. Add both to the baking dish.
- Add the butter, Nature Seasonings, cayenne pepper, cheese and milk, then salt and pepper to your own preference. Stir the mixture to ensure that every potato has both oil and spices on it.
- Bake covered at 350F for approximately 45 minutes, or until the potatoes are soft.
