  • Combine all ingredients in a bowl.
  • Drop by heaping spoonfuls into muffin tins.
  • Bake at 350 F (200 C) for 10-15 minutes, until muffins begin to brown on top.
  • Serve warm with butter.

  1. Very yummy! We all enjoyed these - they were like little breads - and so darn cute - you would want to devour them - and we did! Just the right taste with some hot cocoa - and I chose to put a bit of sugar on top when baking! Just a sprinkle! Loved these and oh so easy to put together. Thanks for posting!
     
  2. I really like these muffins ~ I made them gluten-free using GF AP flour and white rice flour. They do have a very elastic consistency when putting them in the muffin tins, and are a very dense finished product. Mine baked to perfection in 15 minutes. I think I needed to use more bananas ~ I used 3 very large, very ripe ones, but could have gone with a 4th I think :) I also added 1 teaspoon of cinnamon for fun. We really like these Mami J ~ thanks for posting. Made for Spring PAC 2010!
     
  3. These muffins have a nice banana flavor and were not overly sweet. Both the texture of the batter and the resulting muffins were very different from muffins I usually make - very much like a yeast dough. There was a bit of a "chewiness" rather than the typical "crumbliness" of muffins in the USA. Thanks Mami Janine for these tasty muffins. Made for ZWT5.
